If you’ve been eating a lot more comfort food over the past few months like me, you’re going to want to try this delicious and fluffy five ingredient vegan banana pancake recipe! It is so quick and easy to make and is on the healthier side, because this recipe is super low fat and pretty low sugar as well.
The ingredients are most likely things you already have sitting around your house, so there’s no reason not to try this recipe out. I made these pancakes as part of a breakfast for dinner type of meal the other day and ate every last bit of them, they were so good. They take hardly any time to make, and they’re well worth it!
These pancakes are dairy free, egg free, plant based and vegan so they’re 100% guilt free! Try them out and let me know how they turned out for you 🙂
Fluffy 5 Ingredient Vegan Banana Pancake Recipe
What You Need
This will make enough to serve two people at about 4-5 pancakes each:

3/4 cup of your favorite plant based milk (I’ve found that vanilla almond milk and oat milk work best for this recipe)

3/4 cup of flour (you can use a gluten free flour if you’re GF)

1 teaspoon of baking powder

Half of a large ripe banana

1 tablespoon of sugar

Optional: 1 teaspoon of melted coconut oil

Optional: 1-2 tablespoons of chocolate chips for banana chocolate chip pancakes!
How To Prepare

Take a medium sized bowl and mash up your half banana really well, so that it’s just a smooth mixture and there are no clumps in it.

Pour the milk in next (along with the coconut oil if you’re using it) and mix everything together.

In a separate bowl, mix your flour, baking powder and sugar together.

Start to spoon the dry ingredients into the bowl with the wet ingredients bit by bit, until it is all combined and mixed fully.

Now you should have your perfect pancake batter! If you’re making chocolate chip pancakes, now is the time to mix them in. If not, spray your frying pan with a nonstick spray and turn your stovetop on to a low-medium heat setting. Spoon the batter into the pan, and cook until the mixture starts to bubble a little bit. You can always check if the side that’s frying is fully cooked yet using a spatula, and if it is then flip to cook the bottom side for a little bit.

Pour on some organic maple syrup or agave sweetener and enjoy!
